Kashmiri Aloo Dum is a recipe that is taken from the hills of Jammu and Kashmir. It can be taken with poori or chapati. It is cooked with a range of spices along with chilli, curd, ginger and fennel. Kashmiri Aloo Dum would be a perfect one that should be enjoyed with your entire family and it can be taken for dinner. Here are the ingredients and preparation of Kashmiri Aloo Dum:
Two cups of baby potatoes
4 tablespoons of mustard oil
1 tablespoon of Fennel seed powder
2 numbers of black cardamom
1 1/2 tablespoon of caraway seeds
Mustard oil to fry
1 1/2 cup of curd
half tablespoon of dry ginger powder
1 tablespoon of Heeng
Peel the potatoes and take them with fork in places. Pour some mustard oil in the pan and fry the potatoes till they are half cooked. Cool the potatoes and again prick the half-cooked potatoes with a fork. Cook them completely. Separately whisk all the above-mentioned ingredients. Add them along with the curd till it comes to a boil. Lower the heat and cook the mixture for five minutes. Add the potatoes along with some water and enough salt.
Cover the pan till the oil floats onto the surface. It takes 15-20 minutes on the low heat and add water as per your requirement. The gravy should turn thick and it can be served with Indian bread.
